This is a great example of the simple, superb food served at Thomas Keller's Ad Hoc, in the Napa Valley. The steak was cooked sous vide (although the menu didn't even note that - I had to ask to find out) and was ultra-tender. The veggies were examples of how flavorful veggies can actually be when they're fresh-picked. The resto serves a fixed-price, four-course meal, usually priced at $45. There's nothing fancy-looking about the dishes (the photo looks kind of plain, doesn't it?), which are served family-style - BUT they are absolutely the best, freshest ingredients. The subtle preparations let the quality shine through, for a superb dining experience. My husband liked the fact that they'll bring seconds on request! If you can't get reservations at (or afford) French Laundry, this is a much different way to get a taste of Keller's genius. Ad Hoc was only supposed to be around for 6 months, before morphing into a different concept - but has been so popular it's no longer "ad hoc."
